HISTORY
The first Symposium of this series was on dairy propionibacteria and took place in Rennes, France (May 1995). Two other dealing also on the same subject have been organised in Cork, Ireland in 1998 and in Zurich, Switzerland in 2001. However, although the use of dairy propionibacteria as starters in Swiss cheese remains their main industrial application, communications on their potential health benefits has increased in recent years. In addition, bifidobacteria have been studied for many years because of their claimed health benefits. Indeed, a burst of scientific literature dealing on bifidobacteria occurred in last years.
The reasons indicated above, together with the fact that propionibacteria and bifidobacteria are both Gram-positive GC-rich Actinobacteria, sharing many common research interests, prompted the Organizers and Scientific Committee to redirect the scope of the Symposium, the following being organized in Saint-Malo, France (2004) under the denomination of “First International Symposium on Propionibacteria and Bifidobacteria: dairy and probiotic applications”. The second meeting with this renewed orientation was held in Wadahl, Norway (2007).
The new coming meeting, the 3rd International Symposium on Propionibacteria and Bifidobacteria, will be organized in Oviedo, Spain in 2010.
SCOPE
This Symposium aims to present the current advances in dairy propionibacteria and bifidobacteria, considering the important role that they play in dairy industrial applications as well as in human health.
We also hope that this event could provide a good meeting point for scientists and industry to present and exchange their more recent and relevant findings in the field and that this could finally contribute to integrate the advances in these two relevant groups of microorganisms.
